Dopo aver fatto dei test poco convincenti sul mosto della Oerbier con altri ceppi di lievito, ho pensato che la cosa migliore fosse provare a riciclare il precedente. Con un lievito più semplice sarebbe stato anche un buon metodo, ma con la complessità di quello della Rodenbach sono successe subito cose imprevedibili: la gradazione alcolica della Oerbier è salita da 7,5% a 10,5%, mentra quella della Stille Nacht, che ha un grado zuccherino anche più alto, da 8% è passata quasi a 12%. Ovviamente ci sono stati problemi anche in fase di rifermentazione. Quello che era cambiato, in particolare, era l'equilibrio dell'acidità: i batteri erano come spariti. Avevamo un lievito mutato molto potente e puro, ma senza batteri. Le cose strane sono state anche altre: la fermentazione di un batch di Stille Nacht, ad esempio, sembrava non finire più, tanto che le bottiglie degli ultimi tre pallets di quella cotta sono tutte esplose, Despite temperatures in December. Comunque pensiamo che la versione definitiva sarà quella più acida, per quanto serviranno delle modifiche.

Come hanno reagito i nostri clienti? Hanno sentito tutti la differenza e alla maggior parte è piaciuto il gusto acidulo più di quello dolce (mia suocera invece la preferisce dolce!
